ALKALIZED COCOA POWDER
We produce Alkalized Cocoa Power. Alkalized cocoa powder are produced using cocoa that has been treated with an alkali (basic) solution for example potassium, neutralizing the acidity and taming some of the harsh flavor (and giving it a deeper color) and this process is called Dutch-Process. Because of the alkalinity of cocoa powder, it can’t be used in recipes that call for baking soda as a leavening ingredient; the sodium bicarbonate won’t have anything to react with. If, however, the recipe uses baking powder (a leavening agent that has its own acid built in) Dutch-process will work beautifully and create perfect baking experience for your cooking.
NATURAL COCOA POWDER
We produce Natural Cocoa Powder. Cocoa beans are naturally acidic, and so is natural cocoa powder. Our natural cocoa powder is made from cocoa beans that are simply roasted, ground into liquor and after extraction of oil is then pulverized into a fine powder. The pH for natural cocoa powder usually will range around 5.4 – 6.0 which creates a tinge of sourness. This cocoa works best in recipes that uses baking soda as a leavening ingredient, or in non-baked treats where you want a funkier, slightly sour chocolate flavour.
